Ice cream is probably one of the most popular desserts in the history of desserts and many have made ice cream with great success but have you ever tried making soft serve ice cream? Other than the fact that most "soft-serve" ice cream machines are outrageously expensive getting soft serve with low-fat content was surprisingly difficult for us at Pop Fizz and we eventually gave up for a while. Luckily we had some time this past season to work out a recipe that we are finally happy to share with our guests. The ingredients are simple and we have been able to get the texture to something we always wanted.
Pop Fizz Soft Serve is the best thing since regular soft serve.
If you have ever looked at commercially available soft serve mix you will realize they are either heavily processed and/or not even made from dairy products. We wanted a lower fat content soft serve as a higher (10%) fat mix always butters in our machines We use a Taylor soft serve machine so they are a little pricy but you can easily make this recipe in a homemade machine.
Ingredients:
1 1/2Â cups whole milk
1 1/2 cup half and half
1/4 cup heavy cream
3/4Â cup sugar
2 teaspoons pure vanilla extract
1/3 cup nonfat dry milk powder
1/4 teaspoon guar gum
Directions
Combine all ingredients in a bucket or blender head
Blend until completely smooth
Chill for 1 hour
Add to ice cream machine
Eat it up!
